Ingredients
  

  • 12 tablespoons unsalted butter melted and cooled
  • 2 1/3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • For the Lemon Filling:
  • 1 14 oz can sweetened condensed milk
  • 4 large egg yolks at room temperature
  • 2 tablespoons heavy cream
  • 1/8 teaspoon salt
  • 2/3 cup fresh lemon juice approximately 4-5 lemons

Instructions
 

  • Preheat the oven to 350°F (175°C). Prepare a 9x9 inch baking dish by lining it with parchment paper.
  • In a large mixing bowl, combine the flour, granulated sugar, light brown sugar, salt, and baking powder. Add the melted butter and mix until the mixture becomes crumbly.
  • Press about two-thirds of the crumb mixture into the lined baking pan, forming an even layer. Bake for 15 minutes, or until lightly golden.
  • While the base is baking, prepare the lemon filling. In a separate large bowl, whisk together the sweetened condensed milk, egg yolks, heavy cream, and salt until smooth. Gradually add in the fresh lemon juice, whisking continuously to ensure a smooth, creamy mixture.
  • Once the base is out of the oven, pour the prepared lemon filling over the hot crust. Evenly sprinkle the remaining crumb mixture over the top of the lemon filling.
  • Return the baking dish to the oven and bake for an additional 15-20 minutes, or until the topping is golden brown and the filling has set.

Notes

Allow the bars to cool completely at room temperature. Once cooled, refrigerate for at least 4 hours before slicing and serving.
