Ingredients
  

  • Sugar
  • Butter softened
  • Large eggs at room temperature
  • Vanilla extract
  • All-purpose flour
  • Baking powder
  • Salt
  • Confectioners' sugar for dusting

Instructions
 

  • In a large mixing bowl, cream together the butter and sugar until the mixture is light and fluffy, approximately 5 to 7 minutes. Add the eggs and vanilla extract, and beat until well incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the creamed ingredients, mixing until just combined. The resulting dough will be thick.
  • Place spoonfuls of dough, spaced 3 to 4 inches apart, onto a greased, preheated waffle iron. Cook for 2 to 3 minutes, or until the cookies are a deep golden brown.
  • Transfer the cookies to a wire rack and allow them to cool completely. Dust with confectioners' sugar before serving.
