Ingredients
  

  • 1/2 cup old-fashioned oats
  • 1/2 cup buttermilk
  • 1/2 cup plain yogurt
  • 1/2 teaspoon vanilla or almond extract
  • 1/2 cup strawberries sliced
  • 2 to 3 teaspoons honey
  • 1 tablespoon toasted slivered almonds optional

Instructions
 

  • Prepare the oats and strawberries: In a small bowl, mix the old-fashioned oats, buttermilk, and vanilla or almond extract. In a separate bowl, combine the sliced strawberries with honey, stirring gently to ensure even sweetness.
  • Refrigerate overnight: Cover both bowls and refrigerate overnight to allow the oats to absorb the buttermilk and soften. This dish can be prepared in advance, and the oatmeal cups will stay fresh for up to five days when stored properly in the fridge.
  • Assemble the oats in the morning: The following day, the oats should have thickened to a creamy consistency. Top with the plain yogurt and spoon the sweetened strawberries, along with any juice they’ve released, over the yogurt. Garnish with toasted slivered almonds for added texture and enjoy.
  • Alternative Method: Combine all ingredients, except for the almonds, in a pint-size jar. Stir thoroughly, cover, and refrigerate overnight. In the morning, top with almonds and serve.

Notes

Note: This recipe is intentionally not too sweet. If you prefer a sweeter flavor, feel free to add more honey to the strawberry mixture or directly into the oats before refrigerating.
