Ingredients
  

  • 2 Goldrush or Pink Lady apples
  • 1/4 teaspoon ground aniseed
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of kosher salt

Instructions
 

  • Special equipment: a mandoline slicer
  • Begin by preheating your oven to 225 degrees Fahrenheit. Prepare two baking sheets by lining them with parchment paper.
  • In a small mixing bowl, blend the ground aniseed, ground ginger, pumpkin pie spice, and kosher salt until thoroughly combined.
  • Utilizing a mandoline slicer, carefully cut the apples into slices approximately 1/8 inch thick. Arrange these apple slices on the prepared baking sheets, ensuring they are positioned closely together but do not overlap. Evenly distribute the spice mixture over the apple slices.
  • Bake the apple slices for one hour, then carefully flip them over. Continue baking until they achieve a crisp texture, which may take an additional hour to one hour and fifteen minutes. Once done, allow the apple chips to cool completely.
  • Store the cooled chips in an airtight container, where they can remain fresh for up to three days.
