- 1/4 teaspoon ground aniseed
- 1/4 teaspoon ground ginger
- 1/4 teaspoon pumpkin pie spice
- Pinch of kosher salt

Begin by preheating your oven to 225 degrees Fahrenheit. Prepare two baking sheets by lining them with parchment paper.
In a small mixing bowl, blend the ground aniseed, ground ginger, pumpkin pie spice, and kosher salt until thoroughly combined.
Utilizing a mandoline slicer, carefully cut the apples into slices approximately 1/8 inch thick. Arrange these apple slices on the prepared baking sheets, ensuring they are positioned closely together but do not overlap. Evenly distribute the spice mixture over the apple slices.
Bake the apple slices for one hour, then carefully flip them over. Continue baking until they achieve a crisp texture, which may take an additional hour to one hour and fifteen minutes. Once done, allow the apple chips to cool completely.
