- 3 cups cooked rice
- 6 ounces canned spam diced
- 3 eggs lightly whisked
- 2 tablespoons sesame oil
- ½ white onion finely chopped
- 1 cup thawed frozen peas and carrots
- 3 tablespoons soy sauce adjusted to taste
- 2 tablespoons chopped green onions for garnish
Begin by heating sesame oil in a large skillet or wok over medium heat. Once warmed, add the diced spam and sauté until the edges achieve a golden-brown crispness.
Incorporate the chopped onion, along with the peas and carrots, stirring frequently. Allow the vegetables to cook until the onion becomes translucent and soft, approximately five minutes.
Push the spam and vegetable mixture to one side of the skillet. On the other side, pour in the beaten eggs. Using a spatula, gently scramble the eggs until they are fully cooked, then mix them into the spam and vegetables.
Add the cooked rice to the skillet, stirring thoroughly to blend it with the other ingredients. Continue to cook, ensuring the rice is evenly heated and combined with the mixture.
Drizzle the soy sauce over the fried rice and fold it in, allowing the flavors to meld. Taste and adjust the seasoning as needed with salt and pepper.
Finish the dish by garnishing with freshly chopped green onions. Serve hot and enjoy!
