Ingredients
  

  • 3 cups cooked rice
  • 6 ounces canned spam diced
  • 3 eggs lightly whisked
  • 2 tablespoons sesame oil
  • ½ white onion finely chopped
  • 1 cup thawed frozen peas and carrots
  • 3 tablespoons soy sauce adjusted to taste
  • 2 tablespoons chopped green onions for garnish

Instructions
 

  • Begin by heating sesame oil in a large skillet or wok over medium heat. Once warmed, add the diced spam and sauté until the edges achieve a golden-brown crispness.
  • Incorporate the chopped onion, along with the peas and carrots, stirring frequently. Allow the vegetables to cook until the onion becomes translucent and soft, approximately five minutes.
  • Push the spam and vegetable mixture to one side of the skillet. On the other side, pour in the beaten eggs. Using a spatula, gently scramble the eggs until they are fully cooked, then mix them into the spam and vegetables.
  • Add the cooked rice to the skillet, stirring thoroughly to blend it with the other ingredients. Continue to cook, ensuring the rice is evenly heated and combined with the mixture.
  • Drizzle the soy sauce over the fried rice and fold it in, allowing the flavors to meld. Taste and adjust the seasoning as needed with salt and pepper.
  • Finish the dish by garnishing with freshly chopped green onions. Serve hot and enjoy!
