Smoked Salmon and Egg Breakfast Recipe

Ingredients
  

  • 4 slices of bread
  • 2 boiled eggs
  • Smoked salmon strips
  • 2 slices of cheese
  • 2 tablespoons of mayonnaise
  • 1 handful of rocket leaves
  • A pinch of salt
  • A pinch of black pepper

Instructions
 

  • Place two eggs in a medium saucepan, then fill with cold water until the eggs are fully submerged. Set the heat to medium-high and allow the water to come to a gentle boil. Once boiling, reduce the heat and cook the eggs for 12 minutes. After cooking, remove the eggs and let them cool for 5 minutes, then peel and set aside.
  • In a mixing bowl, mash the boiled eggs with a fork, adding 1-2 tablespoons of mayonnaise. Season with a pinch of salt and black pepper to taste, ensuring the mixture is well-combined and creamy.
  • Take one slice of bread and spread the egg mixture evenly across the surface. Layer smoked salmon strips on top, followed by a slice of cheese and half a handful of fresh rocket. Top with another slice of bread, then cut the sandwich in half. Repeat this process with the remaining bread slices to create a second sandwich.
