Ingredients
  

  • 12 large hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1/4 cup finely chopped roasted sweet red pepper strips
  • 2 teaspoons Dijon mustard
  • 2 teaspoons cider vinegar
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup crushed corn chips finely crushed (plus additional whole corn chips for garnish, if desired)

Method
 

  1. Begin by slicing the hard-boiled eggs in half lengthwise. Carefully remove the yolks, ensuring the whites remain intact. In a small mixing bowl, mash the egg yolks thoroughly. Combine the mashed yolks with mayonnaise, roasted red peppers, Dijon mustard, cider vinegar, paprika, salt, and pepper, mixing until well incorporated.
