- 1 1/4 pounds of top sirloin steak
- Salt and pepper to taste
- 1 tablespoon of olive oil
- 4 tablespoons of softened butter
- 1/2 teaspoon of minced garlic
- 1 tablespoon of fresh herbs such as thyme, parsley, or chives, finely chopped, with additional herbs for garnish
Begin by patting the steaks dry with paper towels to ensure a perfect sear. Heat a large cast-iron skillet or another heavy-duty pan over medium-high heat.
Add the olive oil to the pan, ensuring it coats the surface. Season the steaks generously with salt and pepper on both sides.
Place the steaks in a single layer in the hot skillet, cooking for 4-5 minutes on each side, or until a golden-brown crust forms. Use a meat thermometer to check for the desired level of doneness, aiming for 145°F for medium.
While the steak is cooking, prepare the garlic butter. In a bowl, combine the softened butter, minced garlic, chopped herbs, salt, and pepper. Stir until fully incorporated.
After cooking, remove the steaks from the pan and allow them to rest for a minimum of 5 minutes off the heat. Top each steak with a dollop of the garlic herb butter and garnish with additional fresh herbs, if desired. Slice and serve.
