- 2 cups of sliced bell peppers red, orange, yellow, or a combination
- 1 onion thinly sliced
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 pound large shrimp peeled and deveined (tails can be removed, if preferred)
- 2 tablespoons chopped cilantro
- Lime wedges optional, for serving

Heat vegetable oil in a large skillet over high heat. Add the sliced bell peppers and onion, cooking them while stirring occasionally, until they become tender and lightly charred at the edges. Season with salt and pepper to taste.
