Roasted Delicata Squash

Delicata squash is roasted in the oven until tender and flavorful in this easy recipe. You don't have to peel delicata squash. Serve warm as a side dish or at room temperature as a snack with pumpkin spice aïoli.

Ingredients
  

  • 1 large delicata squash ends trimmed, halved lengthwise, and seeded
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • teaspoon cayenne pepper or to taste

  • Begin by preheating your oven to 450 degrees Fahrenheit (232 degrees Celsius). Prepare a rimmed baking sheet by lining it with parchment paper or a silicone mat to prevent sticking.
  • On a cutting board, position the squash halves cut-side down. Proceed to slice them into 3/8-inch thick pieces. Transfer the slices into a large mixing bowl, and drizzle with olive oil. Add salt and cayenne pepper, then toss the mixture thoroughly until the squash is evenly coated.
  • Arrange the seasoned squash slices in a single layer on the prepared baking sheet. Place the baking sheet in the preheated oven and roast until the bottoms turn golden brown and the squash becomes tender, which should take approximately 12 to 18 minutes.

Notes

The cooking duration may vary depending on how thickly the squash slices are cut.
To prepare pumpkin spice aïoli, combine mayonnaise with garam masala, turmeric, and hot paprika to taste for a flavorful dipping sauce.
