  • Pumpkin Cake:
  • cup pumpkin puree
  • 1 cup white sugar
  • 3 large eggs beaten
  • ½ teaspoon ground cinnamon
  • ¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • Cream Cheese Filling:
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar or more, to taste
  • 2 tablespoons butter softened
  • ¼ teaspoon vanilla extract

Instructions
 

  • Begin by preheating your oven to 375 degrees F (190 degrees C). Prepare a 10x15-inch jelly roll pan by greasing it thoroughly.
  • In a mixing bowl, combine the white sugar, pumpkin puree, beaten eggs, and ground cinnamon. Mix until well blended.
  • In a separate bowl, whisk together the all-purpose flour and baking soda. Gradually add this dry mixture to the pumpkin mixture, stirring until the batter is smooth and uniform. Spread the batter evenly in the prepared pan.
  • Place the pan in the preheated oven and bake for 15 to 25 minutes, or until the cake springs back when lightly touched. Once baked, remove from the oven and allow it to cool for 5 minutes.
  • Carefully invert the cake onto a cotton tea towel (avoid terry cloth) and, starting from one short edge, roll the cake up in the towel, jelly-roll style. Set it seam-side down to cool for approximately 15 minutes.
  • While the cake cools, prepare the cream cheese filling by beating together the softened cream cheese, powdered sugar, softened butter, and vanilla extract in a mixing bowl until the mixture is smooth and creamy.
  • Once the cake has completely cooled, unroll it and carefully remove the towel. Spread the cream cheese filling evenly across the cake, reaching all the edges. Roll the cake up once more, this time without the towel. Wrap it tightly in plastic wrap and refrigerate until you are ready to serve.
