Ingredients
  

  • 1 cup sugar
  • 1/2 cup butter softened
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1-1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • Dash of salt
  • 2 cups popped popcorn lightly crushed
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped pecans

Instructions
 

  • Begin by preheating your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy, which should take about 5 to 7 minutes. Incorporate the egg and vanilla extract, mixing until fully combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the creamed mixture, blending until just combined. Finally, fold in the lightly crushed popcorn, chocolate chips, and chopped pecans.
  • Using a tablespoon, drop spoonfuls of the cookie dough onto greased baking sheets, ensuring they are placed 2 inches apart. Bake in the preheated oven for approximately 13 to 14 minutes, or until the cookies are golden brown. Once baked, transfer them to wire racks to cool completely.
