This flavorful Mexican-inspired meatloaf brings a taste of tradition, using taco seasoning for a delicious twist on a classic. This recipe incorporates crushed tortilla chips—just as my Mexican grandmother used to do—to give the meatloaf a delightful texture that keeps everyone coming back for more.

Ingredients
  

  • 1 ½ pounds lean ground beef
  • 1 small onion finely chopped
  • 1 1 ounce packet taco seasoning mix
  • ¾ cup shredded pepper Jack cheese
  • 1 cup crushed corn tortilla chips
  • 2 large eggs beaten
  • ½ cup milk
  • ¼ cup mild red taco sauce plus extra for topping

Method
 

  1. Preheat your oven to 350°F (175°C) and gather all ingredients.
  2. In a large mixing bowl, combine the ground beef, chopped onion, taco seasoning, pepper Jack cheese, and crushed tortilla chips, mixing well to evenly distribute ingredients.
  3. In a separate bowl, whisk together the eggs, milk, and ¼ cup of taco sauce until smooth.
  4. Pour the egg mixture into the beef mixture, stirring thoroughly until all components are incorporated.
  5. Transfer the mixture into a 9x5x3-inch loaf pan, pressing it down to evenly fill the pan. Pour an additional strip of taco sauce along the center of the loaf.
  6. Bake in the preheated oven for 45 to 60 minutes, or until the meatloaf is thoroughly cooked and golden brown on top. Use an instant-read thermometer to ensure the internal temperature reaches at least 160°F (72°C).
