Ingredients

  • Yield: Six to eight servings
  • 2 ½ pounds ground beef round or sirloin, divided into pieces
  • 1 extra-large egg
  • 1 cup dry bread crumbs
  • ¾ cup grated Cheddar cheese
  • 2 cups canned beef bouillon
  • 1 teaspoon salt
  • 1 ½ teaspoons freshly ground pepper
  • 1 ½ teaspoons garlic powder
  • 2 teaspoons dried rosemary leaves
  • ½ cup finely chopped parsley
  • 1 large yellow onion finely chopped
  • 1 large sweet red pepper finely chopped
  • 1 cup finely chopped celery
  • 2 tablespoons Dijon mustard
  • ½ cup ketchup

Instructions

  • Step 1
  • Preheat your oven to 375 degrees Fahrenheit.
  • Step 2
  • In a large mixing bowl, lightly whisk the egg. Incorporate the salt, freshly ground pepper, garlic powder, rosemary, parsley, Dijon mustard, ketchup, and beef bouillon, stirring until thoroughly combined. Add the finely chopped celery, onion, and Cheddar cheese to the mixture, blending well. Introduce the ground beef, sweet red pepper, and bread crumbs, ensuring all ingredients are evenly integrated.
  • Step 3
  • Form the mixture into a loaf approximately 14 inches in length and 3 inches in height. Place the loaf on a jellyroll pan, ensuring it maintains its shape, and transfer it to the oven. Bake for 1 hour to 1 hour and 15 minutes, or until the exterior develops a golden-brown crust.
  • Step 4
  • Once baked, remove the meatloaf from the oven and allow it to rest briefly. Slice into thick portions and serve immediately.
