  • 8 oz lean ground turkey breast 99% lean
  • 4 oz baked tortilla chips
  • 1 cup spicy fat-free black bean dip (e.g., Desert Pepper Trading Company or Trader Joe’s)
  • 1 1/3 cup reduced-fat Mexican cheese blend
  • 2 cups pico de gallo
  • 1/2 cup light sour cream
  • 1/2 cup fresh cilantro chopped
  • 1 jalapeño thinly sliced (optional for garnish)
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Kosher salt and black pepper to taste

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Arrange 1 oz of tortilla chips (approximately 14 chips, depending on brand) on each of four oven-safe plates or spread all 4 oz on a single large baking sheet.
  • Warm a large, nonstick sauté pan over high heat. Add the ground turkey, then season with cumin, garlic powder, kosher salt, and black pepper. Sauté, using a wooden spoon to break the turkey into small crumbles, until fully cooked, about 5 minutes.
  • Once cooked, incorporate the black bean dip into the turkey mixture, stirring thoroughly to combine.
  • Distribute the seasoned turkey mixture evenly over the arranged tortilla chips, then sprinkle the Mexican cheese blend across the top.
  • Place in the preheated oven and bake for approximately 6 minutes, or until the cheese has melted to your liking.
  • Remove the nachos from the oven. Add toppings by layering with pico de gallo, light sour cream, chopped cilantro, and jalapeño slices if desired.
