Ingredients

  • 6 thick-cut boneless pork chops
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 teaspoons minced garlic
  • 1/2 cup ketchup
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons cornstarch
  • 2 tablespoons chopped parsley

Method

  1. Begin by heating olive oil in a pan over high heat. Season the pork chops generously with salt and pepper on both sides, ensuring even coverage.
  2. Sear the pork chops in the pan for 4-5 minutes on each side, until they achieve a deep golden-brown crust. Once seared, transfer the pork chops to the slow cooker.
  3. For those preferring a quicker option, skipping the browning step is possible. Simply season the pork chops and place them directly into the slow cooker.
  4. In a separate bowl, combine the minced garlic, ketchup, soy sauce, and honey. Whisk the mixture together thoroughly and pour it over the pork chops in the slow cooker.
  5. Cover the slow cooker and set it to cook on LOW for 4 hours, allowing the pork to become tender and soak in the flavorful sauce.
  6. After the initial cooking period, mix cornstarch with 1/4 cup of cold water in a small bowl, then add the mixture to the slow cooker.
  7. Continue cooking for an additional hour until the sauce has thickened and the pork chops are fork-tender. Garnish with chopped parsley and serve.

Notes

Boneless, skinless chicken thighs can be used as a substitute for pork chops in this recipe.
For those who prefer a bit of spice, adding sriracha or chili flakes can elevate the dish's flavor profile.
