In a large stockpot, place the quartered apples and add enough water to cover them by at least two inches. Incorporate the sugar, cinnamon, and allspice into the pot. Bring the mixture to a boil over medium-high heat, allowing it to boil uncovered for one hour. Afterward, reduce the heat to low, cover the pot, and let it simmer for two additional hours.
Once the cooking time has elapsed, strain the apple mixture using a fine-mesh sieve, discarding the solid remnants. For a clearer cider, further strain the liquid through a cheesecloth-lined sieve.
