Ingredients
  

  • 1 large lemon freshly juiced
  • 4 garlic cloves finely minced
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 3 tablespoons Greek seasoning blend
  • 1 lb. boneless skinless chicken breasts or thighs, diced into bite-sized portions
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions
 

  • In a resealable plastic bag, combine the lemon juice, garlic, olive oil, white wine vinegar, Greek seasoning, salt, and pepper. Seal the bag and shake thoroughly to ensure all ingredients are well-blended.
  • Add the chicken pieces to the marinade, reseal the bag, and gently massage to coat the chicken evenly. Place the bag in the refrigerator and allow the chicken to marinate for at least six hours, ideally overnight, for optimal flavor absorption.
  • When ready to cook, remove the chicken from the marinade, discarding any excess liquid. Thread the marinated chicken onto skewers. Grill over medium-high heat, either on an outdoor grill or a stovetop grill pan, turning occasionally until the chicken is fully cooked. The internal temperature should reach 165°F when measured with a meat thermometer.
  • Once cooked, transfer the skewers to a plate, wrap them in foil, and let the chicken rest for five minutes. This step enhances juiciness and tenderness. Serve as preferred, accompanied by your choice of sides.

Notes

Storage: Store leftover chicken souvlaki in an airtight container in the refrigerator for up to five days. For convenience, consider removing the chicken from the skewers before storing.
Freezing: To freeze, prepare the chicken in the marinade and place it in a freezer-safe bag. Thaw in the refrigerator overnight before cooking as instructed.
Alternative Cooking Methods: For air fryer preparation, cook at 370°F for 20 minutes, flipping halfway through. For oven baking, place the chicken in a baking dish and bake at 400°F for 20 minutes, turning halfway, until fully cooked.
