Ingredients
  

  • 2 pounds of chicken breast
  • 1.5 pounds of russet potatoes peeled and cut into 2-inch chunks
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 tablespoon garlic powder
  • 1 tablespoon dried dill
  • 2 tablespoons salt divided
  • 1 gallon-sized freezer bag

Method
 

  1. Boil the Potatoes: Begin by bringing a large pot of salted water to a boil. Add the potatoes and cook for about 6 minutes. Once done, drain the potatoes and let them cool completely in a colander.
  2. Prepare the Marinade: In a small bowl, combine the olive oil, lemon juice, oregano, garlic powder, dill, and one tablespoon of salt. Stir the mixture well to ensure the ingredients are fully blended.
  3. Coat the Potatoes and Chicken: In a large bowl, toss the cooled potatoes with half of the prepared marinade, making sure they are well-coated. Transfer the potatoes to the bottom of a freezer bag. Next, use the same bowl to coat the chicken breasts with the remaining marinade before adding them to the bag along with the potatoes.
  4. To Cook the Greek Chicken Freezer Meal
  5. The night before you plan to cook, move the freezer bag to the fridge to allow the meal to thaw.
  6. Preheat your oven to 400°F.
  7. Spread the defrosted chicken and potatoes evenly on a lightly greased rimmed baking sheet.
  8. Bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F when checked with an instant-read thermometer.
  9. For added color and crispness, broil the chicken and potatoes for an additional 3-5 minutes.
