Ingredients
  

  • 2 pounds of chicken breast
  • 1.5 pounds of russet potatoes peeled and cut into 2-inch chunks
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 tablespoon garlic powder
  • 1 tablespoon dried dill
  • 2 tablespoons salt divided
  • 1 gallon-sized freezer bag

  • Boil the Potatoes: Begin by bringing a large pot of salted water to a boil. Add the potatoes and cook for about 6 minutes. Once done, drain the potatoes and let them cool completely in a colander.
  • Prepare the Marinade: In a small bowl, combine the olive oil, lemon juice, oregano, garlic powder, dill, and one tablespoon of salt. Stir the mixture well to ensure the ingredients are fully blended.
  • Coat the Potatoes and Chicken: In a large bowl, toss the cooled potatoes with half of the prepared marinade, making sure they are well-coated. Transfer the potatoes to the bottom of a freezer bag. Next, use the same bowl to coat the chicken breasts with the remaining marinade before adding them to the bag along with the potatoes.

  • The night before you plan to cook, move the freezer bag to the fridge to allow the meal to thaw.
  • Preheat your oven to 400°F.
  • Spread the defrosted chicken and potatoes evenly on a lightly greased rimmed baking sheet.
  • Bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F when checked with an instant-read thermometer.
  • For added color and crispness, broil the chicken and potatoes for an additional 3-5 minutes.
