Ingredients
Method
- Begin by preheating your oven to 325°F. Generously grease a 9x13-inch baking dish to ensure easy removal of the eggs after baking.
- In a bowl, whisk together the eggs, milk, salt, and black pepper. Using an electric mixer can make this step easier and more efficient.
- Pour the egg mixture into the prepared baking dish. Bake for 18 to 22 minutes, or until the center is set. Be cautious not to overcook the eggs, as they should remain soft and tender.
- Once the eggs are baked, remove the dish from the oven and allow it to cool slightly before cutting the baked eggs into 12 equal squares.
- To assemble the sandwiches, place a square of the baked egg on the bottom half of each English muffin, then top with a slice of cheese and your choice of cooked meat. Place the top muffin half to complete the sandwich. If consuming immediately, bake the assembled sandwiches at 350°F for approximately 5 minutes, or until the cheese has fully melted.
- To Freeze:
- Wrap each sandwich individually in foil, wax paper, or parchment paper. Store the wrapped sandwiches in a freezer-safe resealable bag, where they can remain frozen for up to one month.
Notes
To Reheat:
For optimal results, thaw the sandwiches overnight in the refrigerator. To reheat, remove the wrapping and place the sandwich in a paper towel. Microwave on the defrost setting (50% power) for 40 seconds to 1 minute, then flip the sandwich and microwave on high for 10-30 seconds until fully warmed. Alternatively, reheat the sandwiches in an oven preheated to 350°F for 10-15 minutes, or in a toaster oven until heated through.
