  • 2 small or medium racks baby back ribs membranes removed
  • ½ cup brown sugar
  • ¼ cup chili powder
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons ground black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • ½ cup apple cider vinegar
  • 1 cup water
  • 1 12-ounce bottle barbecue sauce (such as Sweet Baby Ray's)
  • 1 tablespoon dried parsley

Method
 

  1. Begin by gathering all necessary ingredients for the recipe.
  2. In a mixing bowl, combine the brown sugar, chili powder, dried parsley, salt, garlic powder, ground black pepper, ground cumin, onion powder, and smoked paprika. Use a fork to thoroughly mix, ensuring there are no large clumps.
  3. Generously rub the spice mixture over both sides of the ribs, ensuring an even coating.
  4. Place a steam rack inside your Instant Pot. Pour the water and apple cider vinegar into the pot's bottom.
  5. Carefully position the ribs inside the pot, curving them around the edge. Secure the lid tightly and select the high-pressure setting, adjusting the timer to 25 minutes. Allow for an additional 10 to 15 minutes for the pressure to build.
  6. Once the timer goes off, release the pressure using the quick-release method as per your manufacturer's instructions, which should take about 5 minutes. Once safe, unlock and remove the lid.
  7. Preheat the oven’s broiler, positioning an oven rack approximately 6 inches from the heat source. Line a baking sheet with aluminum foil and place the ribs on it. Generously brush the ribs with barbecue sauce.
  8. Broil the ribs until the sauce is bubbling and slightly caramelized, which will take approximately 3 minutes.
