Instructions
 

  • Begin by preparing the creamy chicken pasta soup. In a large Dutch oven, heat the olive oil over medium heat. Add the chopped onions, diced carrots, diced celery, and minced garlic, sautéing until the vegetables become tender and fragrant, which should take about five minutes. Incorporate the cooked chicken and continue cooking for an additional three minutes, stirring regularly.
  • Next, pour in the chicken broth, heavy cream, and softened cream cheese. Cover the pot and bring the mixture to a boil. Once boiling, reduce the heat and allow it to simmer for approximately 15 minutes.
  • Afterward, lower the heat further and add the uncooked pasta along with the shredded cheddar cheese. Let the soup simmer until the pasta reaches your desired level of doneness. Toward the end of the cooking process, add the chopped spinach and stir until it wilts.
