Ingredients
  

  • For the Chicken Fritters:
  • 1 1/2 lbs chicken breasts approximately 3 large pieces
  • 4 oz shredded mozzarella cheese about 1 1/3 cups
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour substitute with cornstarch or potato starch for a gluten-free option
  • 1 1/2 Tbsp freshly chopped dill
  • 1/2 tsp salt adjust to taste
  • 1/8 tsp black pepper
  • 2 Tbsp extra light olive oil or another high-heat cooking oil
  • For the Garlic Aioli Dip Optional:
  • 1/3 cup mayonnaise
  • 1 garlic clove finely pressed
  • 1/2 Tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions
 

  • Prepare the Chicken:
  • Using a sharp knife, dice the chicken breasts into small, even pieces approximately 1/3 inch thick. Place the chopped chicken in a large mixing bowl. For ease of cutting, consider slicing the chicken while it is partially frozen.
  • Combine Ingredients:
  • Add the eggs, mayonnaise, flour, shredded mozzarella, dill, salt, and pepper to the bowl with the chicken. Mix thoroughly until the ingredients are evenly incorporated. Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours or overnight for best results.
  • Cook the Fritters:
  • Heat a large non-stick skillet over medium heat. Add 2 tablespoons of oil and allow it to warm. Drop spoonfuls of the chicken mixture (approximately a heaping tablespoon per fritter) into the skillet. Flatten each portion slightly with the back of a spoon. Cook uncovered for 3 to 4 minutes on one side, then flip and cook for an additional 3 minutes or until both sides are golden brown and the chicken is fully cooked. Repeat with the remaining mixture, adding more oil as needed.
  • Prepare the Garlic Aioli (Optional):
  • In a small bowl, mix together the mayonnaise, pressed garlic, lemon juice, salt, and black pepper until smooth.
  • Serve and Enjoy:
  • Serve the fritters warm with the garlic aioli dip on the side, if desired.

Notes

o ensure the chicken is fully cooked, cut one fritter in half; the interior should be completely white. If the fritters brown too quickly, reduce the heat to prevent overcooking.
