Ingredients
  

  • 2 8-ounce blocks full-fat cream cheese, softened to room temperature
  • cups chopped pecans divided
  • cups freshly shredded sharp cheddar cheese
  • ½ cup freshly shredded Monterey Jack cheese
  • 2 green onions chopped (green parts only)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt

  • Prepare the Cream Cheese
  • Allow the cream cheese to reach room temperature before starting the recipe. This process typically takes 1-2 hours, so plan accordingly to ensure the cheese is soft enough for mixing.
  • Mix the Ingredients
  • In a large mixing bowl, beat the softened cream cheese using a hand mixer until smooth. Add the garlic powder, onion powder, and salt, stirring until fully incorporated. Gently fold in half of the chopped pecans, the shredded cheddar and Monterey Jack cheeses, and the chopped green onions.
  • Shape the Cheese Ball
  • Lay a large sheet of plastic wrap on a clean surface. Place the cheese mixture in the center and gather the corners of the wrap to seal the mixture. Twist the wrap tightly around the cheese, then mold it into a ball shape. Cover the ball with an additional layer of plastic wrap.
  • Chill the Cheese Ball
  • Place the wrapped cheese ball in a medium-sized bowl to help maintain its shape. Refrigerate for 1-2 hours, or until the cheese ball is firm and set.
  • Coat the Cheese Ball
  • Before serving, place the remaining chopped pecans on a plate. Carefully remove the cheese ball from the plastic wrap and gently roll it in the pecans, pressing lightly to ensure the nuts adhere to the surface.
  • Serve
  • Serve the cheese ball with a selection of crostini or crackers. For a decorative touch, garnish with freshly minced parsley. If you prefer a softer texture, allow the cheese ball to sit at room temperature for about 30 minutes prior to serving.

Notes

Store any leftovers by wrapping the cheese ball in plastic wrap and placing it in an airtight container in the refrigerator, where it will remain fresh for up to 5 days. Freezing the cheese ball is not recommended, as the texture may change, though some experimentation may yield results.
