Begin by heating a large skillet or wok over medium-high heat. Add the sausage and cook, breaking it apart, until it is thoroughly browned and no longer pink. Once cooked, remove the sausage using a slotted spoon, leaving the rendered fat in the pan to sauté the vegetables.
In the same skillet, add the chopped onions and bell peppers. Sauté for 5-7 minutes, or until the vegetables are tender and fragrant.
Push the sautéed vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until fully cooked. Once done, stir the eggs into the vegetable mixture.
Return the cooked sausage to the skillet, followed by the white rice. Stir everything together until well combined.
Drizzle soy sauce over the rice and mix thoroughly. Allow the dish to heat through.
Garnish with chopped green onions and a sprinkle of everything bagel seasoning before serving.
