Preheat the air fryer to 400°F (200°C).
Season both sides of the pork chops evenly with Cajun seasoning and set them aside on a plate.
Using a small food processor, pulse the croutons until they form fine breadcrumbs. Transfer the crumbs to a shallow dish. In another shallow dish, lightly beat the eggs until combined.
Working with one pork chop at a time, dip it into the beaten eggs, allowing any excess to drip off. Press the chop firmly into the crouton breadcrumbs, ensuring both sides are well coated. Place the breaded chops on a clean plate, without stacking them. Repeat with the remaining pork chops. Lightly mist the coated chops with cooking spray.
Spray the air fryer basket with cooking spray to prevent sticking. Arrange the breaded pork chops in a single layer within the basket. If your air fryer is smaller, cook the chops in batches to ensure proper airflow.
Cook the pork chops for 5 minutes. Flip them carefully, mist any dry areas with additional cooking spray, and continue cooking for another 5 minutes. Use an instant-read thermometer to confirm the internal temperature has reached 145°F (63°C).
Remove the pork chops from the air fryer, serve immediately, and enjoy while hot.
