In a skillet over medium heat, melt the butter and sauté the celery and onion until softened, which should take approximately five minutes. Transfer the mixture to a large bowl and allow it to cool completely.

Once the sautéed vegetables have cooled, combine them with the ground beef, veal, and pork in the bowl. Add the parsley, sour cream, bread crumbs, thyme, marjoram, and a suitable amount of salt and pepper. In a separate dish, beat the egg with Worcestershire sauce and incorporate it into the meat mixture. Blend everything thoroughly using either your hands or a wooden spoon, shaping the mixture into a loaf form.

Place the formed loaf into the prepared pan. Evenly spread the Heinz chili sauce over the top, then lay the bacon slices across it. Bake in the preheated oven until the meatloaf is firm and browned, which should take approximately one hour. Remove from the oven, let it rest for a few minutes, then slice and serve.
