  • 3 pounds beef eye of round roast at room temperature
  • ½ teaspoon kosher salt adjust to taste
  • ½ teaspoon garlic powder adjust to taste
  • ¼ teaspoon freshly ground black pepper adjust to taste

  • Begin by assembling all required ingredients.
  • Preheat your oven to 375 degrees F (190 degrees C).
  • Ensure that the roast is at room temperature. To promote even cooking and prevent drying, tie the roast at 3-inch intervals with cotton twine. Position the roast on a rack within a baking pan.
  • In a small bowl, combine the kosher salt, garlic powder, and black pepper. Rub this seasoning mixture thoroughly into the surface of the meat.
  • Place the seasoned roast in the preheated oven and roast for approximately 60 minutes, or 20 minutes per pound, depending on the size of your roast. An instant-read thermometer inserted into the center should register between 120 to 125 degrees F (49 to 52 degrees C).
  • Once the roasting time is complete, remove the roast from the oven and transfer it to a cutting board. Loosely cover it with foil and allow it to rest for 15 to 20 minutes, which will enable the juices to redistribute throughout the meat.
