Instructions
Preheat your oven to 350°F (177°C). Lightly coat a donut pan with non-stick spray and set it aside.
Prepare the Donuts:
In a medium mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk until thoroughly blended.
In a separate bowl, whisk together the egg and brown sugar until smooth. Gradually incorporate the melted butter, mashed banana, vanilla extract, and buttermilk, stirring until fully combined.
Pour the wet mixture into the bowl of dry ingredients, stirring just until the batter is cohesive. Take care not to overmix.
Transfer the batter to a large zipped-top bag for easier handling. Cut a small opening in one corner of the bag and pipe the batter into the prepared donut pan, filling each cavity approximately two-thirds to three-quarters full.
Bake for 9–10 minutes or until the edges turn lightly golden. Allow the donuts to cool for two minutes before transferring them to a wire rack placed over parchment paper or a baking sheet. Repeat with any remaining batter. Let the donuts cool until they are comfortable to handle.
Prepare the Glaze:
Combine the chocolate chips, butter, corn syrup, and water in a microwave-safe bowl. Heat in 20-second intervals, stirring after each session, until the mixture is fully melted and smooth.
Dip the tops of each cooled donut into the glaze, allowing any excess to drip off. Place the glazed donuts back on the wire rack to set.
Storage Tips:
These donuts are best enjoyed on the day they are prepared. However, they may be stored in an airtight container at room temperature for up to two days.
