  • 1 pound 93% ground turkey
  • 1/4 cup ketchup plus an additional 2 tablespoons for topping
  • 1/3 cup quick rolled oats
  • 1/3 cup minced onion
  • 1/3 cup grated zucchini thoroughly squeezed to remove excess moisture
  • 1 large egg beaten
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • Optional: minced parsley for garnish

Method
 

  1. In a medium mixing bowl, combine the ground turkey with the quick rolled oats, minced onion, grated zucchini, 1/4 cup of ketchup, beaten egg, kosher salt, and black pepper. Blend the ingredients thoroughly using a fork until well incorporated.
  2. Portion the mixture into four equal parts and shape each portion into mini loaves.
  3. Place the formed loaves into the air fryer basket. Cook at 350°F for 15 minutes, then flip each loaf, brush the tops with the remaining ketchup, and continue cooking for an additional 5 minutes, or until the center reaches a safe internal temperature.
