- 1/4 cup ketchup plus an additional 2 tablespoons for topping
- 1/3 cup quick rolled oats
- 1/3 cup minced onion
- 1/3 cup grated zucchini thoroughly squeezed to remove excess moisture
- 1 large egg beaten
- 1 teaspoon kosher salt
- 1/8 teaspoon black pepper
- Optional: minced parsley for garnish
