- Take the turkey legs out of the refrigerator at least 30 minutes prior to cooking. Pat them dry with paper towels, then brush evenly with olive oil. Generously season with sea salt flakes and freshly ground black pepper.
- In a small mixing bowl, combine the mayonnaise, honey (or maple syrup), smoked paprika, brown sugar (if using), Cajun seasoning, and Italian seasoning. Carefully loosen the skin of the turkey legs and spread a portion of the seasoned mayonnaise mixture beneath the skin for enhanced flavor.
- Preheat the air fryer to 350°F (180°C) for approximately 5 minutes. Arrange the turkey legs in the air fryer basket, ensuring they are spaced apart to allow optimal air circulation. Cook for 10 minutes on one side, then flip and continue cooking for another 10 minutes. Begin basting the turkey legs with the remaining seasoned mayonnaise mixture.
- Continue air frying for an additional 10-15 minutes, or until the turkey legs develop a deep golden-brown hue and reach an internal temperature of at least 165°F (75°C) at the thickest part. Use a meat thermometer to verify doneness, as cooking times may vary depending on the air fryer model and turkey leg size.
- Once cooked, transfer the turkey legs to a serving platter and loosely cover them with aluminum foil. Allow them to rest for 15-20 minutes to enable the juices to redistribute, ensuring optimal tenderness.
